PROXIMATE COMPOSITION AND AMINO ACID PROFILE OF SELECTED VEGETABLES FROM ALIERO FADAMA, ALIERO, KEBBI STATE, NIGERIA

Abstract
The proximate and mineral element compositions as well as the amino acid profile of tomato, onion and their stalks were analyzed in samples from six agricultural fields in Aliero town, Aliero, Kebbi State of Nigeria. From the results, the vegetables indicated the presence of appreciable amounts of crude protein and total dietary fibre. For the macro elements, the trend of Mg>Ca>P>K>Na was observed in tomato samples, while the trend of Mg>K>Ca>P>Na was observed in both onion bulb and their stalk samples. Significant differences at PZn>Cu>Mn>Ni was observed in both tomato and onion bulb samples, while the trend of Fe>Mn>Zn>Cu>Ni was observed in onion stalk samples.
