Bread is one of the most important food sources all over the world as it is extensively consumed in homes, restaurants, and hotels. However, the amount of potassium bromate (KBrO3), a basic ingredient added to improve its quality, is known to be toxic and have carcinogenic effect. As such, if not checked, it may be in excess of the acceptable limit and could pose health hazards to consumers. In view of this, this research was conducted to determine the levels of KBrO3 in selected bread samples in Aliero, Kebbi State, Nigeria. The analysis was conducted in accordance with the standard method for analysis. The results showed that the levels ofKBrO3 in all the samples ranged from 0.02 ± 0.0.00 to 0.78 ± 0.00 (µg/g). Thus, the concentrations of KBrO3 in all the samples were above the standard value of 0.02 µg/g by the United State Food and Drugs Agency. . This implies that consumption of these breads may pose a health threat to consumers. . Therefore, the regulatory bodies concerned should keep a close monitor of the levels of KBrO3 in breads sold in the town in order to safeguard the health of the consumers.
