The present study was conducted to define the relative effects of changes in the type of dietary fat on a number of key parameters involved in the regulation of cholesterol and lipoproteins levels. The present data indicated that intake of butter and cholesterol diet caused significant elevations in body weight, total lipids, triglycerides, total cholesterol, LDL, VLDL, glucose and iron levels in mice during the experimental period. On the other hand, this atherogenic diet caused low levels of HDL, T3, and T4 as compared to control. It was obvious that olive oil could improve these changes completely .While, sunflower oil improved these changes partially .It was evident that olive oil is more effective than sunflower oil ,this may be due to its high content of oleic acid and its antioxidant phenolic substances.
