Aromatic pandanus leaves (Pandanus amaryllifolius) are known as cooking flavoring leaves because of their aroma and biological activities that are beneficial to health. So far, there is uncertainty in using young and fresh leaves and old leaves. The phytochemical composition of P. amaryllifolius on different leaf development was used as the target in this study. GC-MS analysis revealed 16 compounds in old leaves and 21 in young ones. This study categorizes the identified compounds into several classes: phenols, prenol lipids, steroids and steroid derivatives, fatty acyls, and other metabolites. The results showed that the compound 2,6,10,14,18,22-Tetracosahexaene,2,6,10,15,19,23-hexamethyl-,(al-E)- was most dominant in old leaves and young leaves at 45.84 % and 19.22 %, respectively. International library search results show that the compound has the potential as an anti-aging and anti-tumor.
